Carrot Cake Collagen Balls

One for all and all in one! These carrot cake collagen balls have everything you need  in a snack: a bite of veggies, a bunch of fruit and a gracious plenty of protein. Spring into action!

Ingredients

  • 1-1/2 cups organic rolled oats

  • 4 scoops Vital Proteins Collagen Peptides Unflavored

  • 2-3 carrots, peeled and chopped

  • 3 Tbsp. nut or seed butter of choice

  • 2 tsp. organic ground cinnamon

  • 1/2 cup unsweetened shredded coconut

  • Pinch of salt (optional)

Directions

  1. In a food processor, blend carrots until mostly shaved but still a little chunky.

  2. Add remaining ingredients to processor and blend until smooth. Mixture should start to bind together. Note: I added the coconut toward the end, because it was already shredded.

  3. While processor is blending, add a tablespoon of water through the top spout to moisten the mixture and help the collagen stick.

  4. Scoop out a little more than one tablespoon of blended mixture. Using your hands, roll mixture into balls (about 1 inch round).

  5. Eat right away or chill in the refrigerator for optimal flavor. Store in an airtight container for up to a week.

Meal prep tip: If you’re using a plastic storage container, lay a piece of parchment paper on the bottom. This will prevent the balls from sticking.
